Sandwich Bread
250g Potato starch
150g Fine white rice flour
15g Dextrose (or fructose or sugar)
7g Salt
15g Fresh baker's yeast
40g BAKER MIX
350g Water
10g Sunflower seed oil (or other)
Work in a planetary mixer with the "paddle" gradually adding the liquids. Continue at medium-high speed for about 4/5 minutes until you get a smooth and homogeneous mixture.
Transfer to the mold, let rise for 70 minutes at 35°C well covered, and bake at 200°C for 45 minutes.
Before baking, brush the surface with seed oil.

Brioche Bread
250g Potato starch
150g Fine white rice flour
10g Milk powder
10g Egg powder
50g Granulated sugar
4g Salt
20g Fresh baker's yeast
40g BAKER MIX
350g Water
25g Sunflower oil (or other)
For assembling: 60g Soft butter, not melted
Work in a planetary mixer with the "paddle" at medium-high speed for about 5/6 minutes.
Add the soft butter and continue kneading until you get a smooth and homogeneous dough.
Transfer to the mold, proof at 35°C for 70 minutes, brush the surface with seed oil and bake at 200°C for the first 25 minutes and continue at 180°C for another 20 minutes.

Sourdough Bread Loaf
250g Liquid 1:1 sourdough starter, refreshed and well active
25g Very fine white rice flour
250g Potato starch
15g Dextrose (or fructose or sugar)
7g Salt
40g BAKER MIX
200g Water
10g EVO oil
Combine everything in a stand mixer and work at medium-high speed with the "paddle" for about 6/7 minutes.
Place in the basket, cover, and let rise at 35°C for about 120 minutes.
Turn the loaf onto baking paper, spray it with water, and bake at 230°C for 25 minutes.
Lower the temperature to 180°C and continue for another 25 minutes.
