ANGEL MIX

Gluten-free, wheat starch free and 100% vegan plain white bread

Ingredients for 10 bread rolls

250g Corn starch
100g Rice flour
50g Very fine corn flour
30g Tapioca starch
10g Blond flaxseed flour
9g Fine salt
3g Sugar
55g Angel Mix
10g Fresh yeast

370g Water at room temperature
30g Vegetable oil (seed, olive, etc.)

Preparation

Gather all the powders in the mixer bowl and start it at low speed using the "hook".

Pour in the liquid ingredients and continue to work for about ten minutes, switching to medium-high speed and cleaning, from time to time and with the machine stopped, the sides of the bowl, using a spatula and bringing the mixture back to the centre.

Turn the dough out onto the table, and using rice flour as a duster, cut out 12 pieces. Work the dough between your hands until it forms the desired shape (round, long, narrow, etc.), and place them on the baking tray. Lightly score the surface with a dampened blade, to allow better development of the product during leavening and cooking and leave to rise.

Proofing

Leave to rise for approximately 70/80 minutes at a temperature of 30/35°, or at least until the volume triples, with a humidity of 60/70%.

Alternatively, place the baking tray in a bag, previously brushed with oil or non-stick spray and leave to rise in a turned off oven with a bowl of warm water, to guarantee the necessary temperature for leavening.

Baking

For a more golden product, brush the surface of the product with vegetable oil or cocoa butter, JUST BEFORE baking in the hot oven,

Preheat the fan oven to 200° and bake the product for 17 minutes. It should be golden brown, light and crispy on the surface.

You can spray a little water on the walls of the oven, for better development of the final product.

Cool on a wire rack, and close in a bag to keep the product at room temperature for a couple of days, or store at -18° for up to 30 days from the production date.

It is possible to give it a new fragrance by briefly placing it in a hot oven, approximately 3' at 180°.
