Proportion for 9 Buns

Ingredients:

DUST:

  • 250g Cornstarch
  • 180g Very Fine Corn Flour
  • 100g Tapioca Starch
  • 12g Fine salt
  • 10g Granulated sugar
  • 20g Fresh yeast
  • 20g Psillio
  • 30g ANGEL MIX

LIQUIDS:

  • 440g Water at room temperature
  • 30g Extra virgin olive oil

FOR THE DUSTING:

  • Rice/corn flour 

Procedure:

Gather all the "powders" in the mixer bowl and start it at low speed with the hook.

Pour in the "liquids" and continue to work for about ten minutes, switching to medium-high speed and cleaning, from time to time and with the machine stopped, the sides of the bowl using a spatula and bringing the dough back to the center.
Continue working until you obtain a smooth, homogeneous and firm mixture.

Transfer the dough to the table sprinkled with flour, knead it briefly with your hands and form a 45cm loaf.
Divide the loaf into 9 pieces of 5cm each and work each piece between your hands until it forms a smooth and homogeneous ball.

Arrange the buns thus obtained on a baking tray lined with baking paper. Slightly flatten the surface of the balls by pressing with your fingers, lightly grease with oil or non-stick spray and cover with a plastic sheet.

Leave to rise until tripled in volume (ideal leavening temperature 40/45°C for approximately 80 minutes), then grease the surface of the buns with seed oil or extra virgin olive oil or with melted cocoa butter.

Bake in a preheated oven at 200°C for 15 minutes (adjust time and temperature if you prefer other shapes or sizes of bread).

Remove from the oven and leave to cool. It is possible to freeze the product for up to 45 days from the production date.

Note:

It is a soft and soft bread, perfect for hamburgers or cheese burgers, but also simply with cold cuts or tomato and mozzarella, etc.

It is a completely vegan product, so it is perfect to accompany vegetarian burgers, vegan cold cuts or cheeses or as an accompaniment to a vegetable-based meal.

It is possible to brown the surface of the sandwich with egg yolk or whole egg, to obtain a shinier and brighter color or to adhere sesame seeds, poppies, etc.
